| 13 | 1. Crack egg yolks into weighing vessel, putting aside whites | ||
| 14 | 2. Add only enough whites to make 200g, discarding rest | ||
| 15 | 3. Whisk, and combine with flour | ||
| 16 | 4. Knead for 10 mins | ||
| 17 | 5. Wrap in cling-film and refrigerate for at least 30 mins | ||
| 18 | 6. Divide into three portions | ||
| 19 | 7. Roll each into sheets using pasta machine (optionally, freeze at this point) | ||
| 20 | 8. Cut into noodles using pasta machine | ||
| 21 | 9. Add water to pot, salt liberally, and bring to boil | ||
| 22 | 10. Cook pasta for 1-3 mins until "al dente" | ||
