131. Crack egg yolks into weighing vessel, putting aside whites
142. Add only enough whites to make 200g, discarding rest
153. Whisk, and combine with flour
164. Knead for 10 mins
175. Wrap in cling-film and refrigerate for at least 30 mins

197. Roll each into sheets using pasta machine (optionally, freeze at this point)
208. Cut into noodles using pasta machine
219. Add water to pot, salt liberally, and bring to boil
