# Pasta
Serves 3
## Ingredients
- 300g flour
- 5 eggs
- salt
## Method
1. Crack egg yolks into weighing vessel, putting aside whites
2. Add only enough whites to make 200g, discarding rest
3. Whisk, and combine with flour
4. Knead for 10 mins
5. Wrap in cling-film and refrigerate for at least 30 mins
6. Divide into three portions
7. Roll each into sheets using pasta machine (optionally, freeze at this point)
8. Cut into noodles using pasta machine
9. Add water to pot, salt liberally, and bring to boil
10. Cook pasta for 1-3 mins until "al dente"
11. Serve with sauce
